In applying techniques and skills in transforming excellent produce and engaging with my clients directly, shearing stories and building a friendship, face-to-face in understanding their needs, wants and overall story allows chefs to be successful in providing what customers want, a memorable dining experience. What is as important as knowing where your food comes from, is knowing who is cooking your food. These principles are dear to me with every cooking session, were it be a dinner for 2 persons or a small dinner party with every customer I meet. Being able to meet, greet and cook for my customers in person bring much joy, and to see their responses is immediate re-affirmation that I am where I belong, That following my passion to becoming a chef was worth the risk.
